All of these health benefits can be attributed to polyphenols.  The vast majority of polyphenols in the American Diet come from coffee instead of fruits and vegetables because of the amount of coffee drunk in this country.  In the Mediterranean region most of the polyphenols come from fruits and vegetables.  Polyphenols from fruits and vegetables are more complex than those from coffee.  This is one of the primary reasons for the health benefits of the Mediterranean diet.
