Unfortunately, the data suggests perhaps the opposite. The new generation of interesterfied fats indicates that they may increase insulin resistance. Simply frying the foods in vegetable oils generates toxic chemicals (HNE and others) that promote inflammation. Bottom line, don’t eat fried food.
