The best cooking oil is high-oleic safflower or sunflower oils.  These genetically modified oils are very rich in monounsaturated fats with a high smoke point.  The next best choice would be refined olive oil.  It doesn’t have the healthy polyphenols as extra virgin olive oil does, but it is more stable at high temperatures.
