Is there room for using coconut oil in the Zone diet? I note that it is not listed in the zone recipes. If I want to use it, is it a reasonable substitute for olive oil?

Extra virgin olive oil is vastly superior to coconut because it contains both monounsaturated fat and polyphenols. Neither are found in coconut oil.
