New process could make chocolate healthier, tastier

Researchers say they have found a way that might make chocolate healthier and more delicious. Past research has suggested that chocolate is linked to a number of health benefits, such as lower blood pressure and cholesterol levels, and reduced stroke risk, due to antioxidants called polyphenols, according to the researchers.

This is not a new process. It has been known for more than a decade. However, even polyphenol-rich cocoa still is a problem as high levels of cadmium and lead are consumed to get adequate levels of the polyphenols that provide all of the glowing health benefits attributed to chocolate.
