In an age when organic fruit is grown in Chile and then sold in Boston, we often forgot the concept of locality.  The greater the distance of transport, the greater the potential of bacterial contamination as well as loss of nutrients.  The ideal format might be frozen milk, but that would destroy the milk emulsion that makes milk taste like milk.
