When I awoke in a strange hospital room, I had to ask what had happened. I was told that I had collapsed at home and been been taken to the nearest emergency room by my husband, who said that I may have Lyme's Disease as I had recently been bitten by two deer ticks while on a trip to Wisconsin. Utah does not yet have Lyme's Disease, so the doctor drew a blood sample to check the blood sugar level. The level was so high that their equipment could not read it. The sample was sent to Salt Lake City. A normal reading is 100. Mine was 1450, and I was in critical condition for the next 36 hours. I remained in the hospital for six days, receiving treatment for diabetes, which I hadnot known I had.
Upon release, I was still receiving four shots of insulin per day, which the doctor said I would be on for the rest of my life. He also said that he was a friend of Dr. Barry Sears, and he recommended the Zone Diet. My husband, who is the chef in the family, researched the diet and completely changed our way of eating. I soon lost nearly 25 pounds, and he lost almost fifty. Within four months I was able to completely get off insulin and take metformin pills, something my doctor has repeatedly said he never thought I'd be able to do. Since then we have traveled extensively, including trips to Japan, Chile, Egypt, Russia, China, etc., and we've always tried to stay as close to the Zone Diet as possible despite varying kinds of food. My blood sugar levels have remained so consistenly normal that I no longer even have to check them. P.S. It turns out that I also did have Lyme's Disease.
