Q: I find it difficult to limit salad dressing for a big salad to 1 teaspoon of olive oil plus vinegar to taste. Why is it necessary to so strictly limit oils like cold-pressed extra virgin olive oil? Also, what is your opinion of the non-gmo, no transfat margarines?
A: Over-consumption of good fats decreases the release of stored fat from the adipose tissue. Adding more fat your diet will have no impact on insulin, but will slightly slow down the reduction of stored body fat. If that is not a problem, then add a little extra monounsaturated fat to each meal. The margarines you mention are far more dangerous than transfats because the fats have been chemically altered, which will increase insulin resistance.
