Tofu safety

Q: Do you consider tofu to be processed and do you think that it is safe to eat? I don't want to have to worry about limiting soy for fear of breast cancer, but I want to be able to eat tofu.  Is it safe?  I don't know the cancer risk in the family tree.

Dear Laurie,
A: Tofu is obviously safe to eat in moderation. It still contains high levels of isoflavones that can bind to thyroid receptors. As long as your isoflavone intake is under 50 mg. per day, there should be no problem. On the other hand, soy imitation meat products use soy protein concentrates that have no isoflavones. As a result, you can eat much higher amounts of these products.
