Olive and sesame oils

Q: Which has more polyphenols and a greater reduction in silent inflammation, extra- virgin olive oil or toasted sesame oil? Also, how much should I take of this in supplement form?

A: Each has different polyphenols. Those in extra-virgin oil inhibit the formation of inflammatory mediators derived from arachidonic acid. Those in toasted sesame oil inhibit the formation of arachidonic acid itself; therefore, they are synergistic when taken together. I would recommend about one tablespoon of one or the other on alternate days.
