Q: I recently read that eating a potato without protein (but with fat) before bed results in increased serotonin. This is confusing to me because I thought that one of the benefits of the Zone Diet is to increase serotonin. I don't think you would advocate eating a potato with skin and butter but without any protein before going to bed.
A: Eating a potato with butter is a sure way to increase nocturnal hypoglycemia. It will not increase serotonin levels.
